CAULIFLOWER PIZZA CRUST...HEALTHY EATING...




My youngest has great eating habits.  I really should take after her!  But those darn Dunkin Donut Iced Caramel Latte with whip cream get me all the time. I just can't drive past a DD without stopping.  She came across this recipe on YouTube link HERE...

IT WAS SO GOOD!  I can't wait till she makes it again.



CAULIFLOWER CRUST PIZZA RECIPE

INGREDIENTS
~1/3 head cauliflower (enough for 2 cups cauliflower rice-- one medium head will usually yield about 6 cups of rice)
1 egg
1/2 cup parmesan
1/4 cup mozzarella
1/4 tsp salt
1/8 tsp pep
1 tsp garlic

PROCEDURE
In a processor, blend up cauliflower florets. Steam cauliflower by placing in microwave in a bowl (you don't need to add water or cover) and heat 7-8 minutes, stirring once. Allow to cool.
Preheat oven to 400F.
Place 2 cups of cauliflower rice in the center of a piece of cheesecloth or old dish towel (I used a dish towel, but make sure you use one you don't care about as it will likely stretch out). Create a ball with the rice inside of the cloth and ring out the water. DO NOT SKIP THIS STEP--IT WILL MAKE OR BREAK YOUR CRUST! You need to remove as much moisture as possible- continue to ring until water stops coming out of cloth.
Transfer to a bowl and mix will all other ingredients.
Spread out dough on a pizza pan, lined with parchment paper and sprayed.
Bake 9-12 minutes, until firm and cooked through. Remove from oven and add desired toppings ((I used homemade pasta sauce, mozzarella, basil, zucchini, sautéed onions/garlic and turkey pepperoni!). Return to oven for another 5-7 minutes, until cheese is melted.
Slice and devour!

    CHICKEN AVOCADO BURRITOS (PINTEREST)

    Pinterest tried and LOVED...

    2 Cups of cooked chicken
    1 Avocado
    2 TBSP Fresh Cilantro
    1 TBSP Oil (I used Olive Oil)
    Tortillas (I only had small  (On Hand)
    Sour Cream
    Mozzarella Cheese
    Mustard
    Salt & Pepper
    1/4 Cup Water



    Begin by adding oil to frying pan then add your chicken (I used tenderloins) add your salt and pepper and cook on both sides until cooked then using a pastry brush-brushed on Mustard each side of chicken.  Add 1/4 cup of water and cover and simmer.

    Cut up your Cilantro, Avocado
    Then after chicken is cooked I used another frying pan with a small amount of heated oil.  Add sour cream on your tortilla, cilantro, avocado, mozzarella cheese, then top with chicken.  Then lay in frying pan and let it warm then remove with spatula and fold over.

    If you are using the large tortillas you can place all ingredients in tortilla (after chicken is cooked of course) then roll it up then heat it on both sides until golden..Serve Warm.

    Verdict:  Myself and my oldest LOVED it; but my youngest preferred it without the cilantro.  We will definitely be making again and adding it to our 30 day meal planning list.  Hubby is a meat and potato man.  When he works late we get to eat our foo-foo stuff as he calls it.
